'Mak huang' is hard to come by in NZ. We substitute ours with carrots and cucumbers.

What does everyone else use to make this dish in other countries?

It looks delicious. She is using quite a big mortar (bowl).

Not yet, we are going over for 2 weeks in May (I wish it were a month). I plan on stopping by quite a few of these road-side vendors.

I like how they gave the person recording this a taste first. If fire flies out of their mouth and steam out of their ears, like mine does when Keo makes it, then it is just right.

We will be getting married over there during that time. I will be sure to post videos on YouTube and link them here. We are both very excited, and more so every day!!!

The flies lingering around the 'food' might turn some people off. You might want to go indoors to dine. We wouldn't want to deter any prospect 'investers' away from our beloved Laos.

Larb Dip, please do NOT insert you comments into my quote. This may have been an accident on your part, and if so I forgive you, but in some other forums I belong to it has gotten some people banned. I thank you in advance for your understanding in this matter.

It's okay. Forums function and look different on different computers. I probably jumped the gun a bit, again.

I talked my wife into making me some thum mak huang tonight after work. It should be ready very soon. Mmm. I'm ready for the FIRE!!!

It's a unique dish that makes your mouth water, just by thinking about it. How much chili does your wife put in it?

Title: Re: thum mak huang - papaya salad
Post by William Kelley on 22nd Mar, 2011 at 5:44am
She likes to put in 5 or 6 Thai chilies, but I asked her to only put in 4 for me. I can not eat it that hot yet.

We had papaya salad, with fish, sticky rice, and a banana  for desert. Also water, for me the water was a MUST.

Fish and sticky rice goes well with it.

Every time I burn my mouth with chili, the elders tell me not to drink water because it just makes it worst.

After eating tum mak hung drink soda. You'll keep running to the bathroom if you drink water.

As Dorthy would say, "Oh my!"

I never thought of Montezuma's Revenge. I better pack a small med kit with some Imodium, Theraflu and the like. Thank you! It could have really put a damper on our trip.

Don't worry about me practicing with the chilies. When you marry a Lao woman who loves to cook, I guess that comes with the territory.

Why, when Lao women are making papaya salad look at me and say "Papaya pok pok", do they always break out in a giggle?

Does it have some comic meaning? :-/

Haha, my students in Thailand do the same thing. Sometimes they also say 'sep baw?' if they see me eating som tam. That bugs me a bit since they're really making fun of me.

Make sure you go to a travel doctor, they should be able to give you a prescription for antibiotics, so if you do get sick just start popping antibiotics for a few days and you'll feel better. Also you can get pills for immunization against typhoid :D. Fun times...

Depends on who's mouths those statements are coming out of. If from a Siamese then it could have SACRCASTIC lilt to it. However, if the query comes from a Lao or Isaan, then they may actually want to know if their cooking really is 'sep baw'? ;)

I have never heard of a travel doctor. Is there such a thing here in the states? Or do I go see one in Laos?

The best salad ever!  I make it nearly every weekend whenever I bbq some pork ribs or beef steak. :)  I used to put in 10-15 chilies now I can only handle 6, getting older I guess. :)
